Greece slide show

Holly and I took a trip to Greece in early June. We took over 1000 photos and there were days we didn't even take any photos!

We flew into Athens and stayed in a great Airbnb condo that was in between the port and the Acropolis. Great central location with views of the city and the water.

I have always wanted to see the Acropolis and it didn't disappoint.  The museum is one of the best I've been to.  Below the Acropolis is a great little European style walking neighborhood with shops and restaurants and ruins strewn in between. This is what I expected Athens to be like. Unfortunately, most of the rest of it is a concrete jungle erected post war era. We had 4 days in Athens and seen everything in 2 days. So we took a day trip by ferry to Aegina which was just what we needed.

From there Naxos then Santorini and back to Athen. In hind sight, I think we could have spent only two days on Santorini and visited another island.

The Cochon de Lait Po-boy





This is a Jazz Fest highlight. If you've been, then you know what I'm talking about. You can find the recipe for this on the GONOLA site.

Now, don't be turned off by the fact that one of the ingredients is Emeril's essence. It's just a creole rub that is poorly named.

This recipe is super easy as long as you have a slow cooker. Don't skip the creole mayo either. This is now hands down my favorite slow cooker pork recipe. I didn't have access to po-boy rolls so I used a pinino. It wasn't as authentic but it was still really, really good. Use what you can but don't skimp on the bread.

Amazing Day in Seattle

Epic day in Seattle. One could get used to this. 75 - 80 degrees in mid-May is certainly a nice gift. Especially when it's here for the week.

These were taken from a top the pedestrian bridge that connects Elliott to the park right outside my office.

Of course, you might have heard the saying:
What do you call the day after two days of rain in Seattle? ...Monday

Until then we will Grill and try not to get a sun burn.
